Healthy sTart (IFT 2004-05)
Healthy sTart is a hand-held crunchy granola bowl made from a blend of grains that is filled with a light and creamy yogurt spread and topped with blueberries and strawberries. It provides protein, iron, calcium, vitamins, antioxidants, dietary fiber and photochemical to a heart-healthy diet. This delicious frozen tart takes only a few minutes in the microwave or oven before it is ready to eat for breakfast, dessert or as a snack. Healthy sTart is going to compete with six other teams at the annual IFT meeting in NewOrleans in July 2005.
Cone-coxions (Grand Prize Winner, Almond Innovations 2004-05)
Cone-coxions are mouth watering bite-sized crispy almond waffle cones layered with rich dark chocolate and drizzled with crunchy almond pieces. Almond skins and meal are incorporated into the cone to provide natural contrasting almond shades that give the consumer a spectacular first impression. Almonds, the main ingredient in Cone-coxions, provide monounsaturated fats, dietary fiber and vitamin E, all of which are proven to benefit general health.
Sp2a.c.e. T.wirl for the astronauts (NASA competition 2004-05)
Sp2a.c.e. T.wirl (Sweet Potato, Spinach and Cabbage Edible Tomatoes) is a dehydrated multi-layered vegetable roll developed for in-space production. It is composed of three delectable sweet potato-tomato based layers. The vibrant orange outside layer is made from sweet potato and tomato. The next layer is made from the sweet potato-tomato base plus spinach, which imparts a hunter green color while the innermost layer is made from the sweet potato-tomato base plus cabbage, creating a deep, rich purple color. Sp2a.c.e. T.wirl provides the convenience of one complete serving of vegetables that can be eaten anywhere without additional preparation.
VegeByte (Inst. of Food Technologists competition, 2003-04)

VegeByte was one of the six finalists to go to Las Vegas Nevada for the annual Institute of Food Technologists Product Development Competition in 2003-2004. VegeByte is a delicious snack bar made from freeze dried vegetables and nuts. One bar of VegeByte is a good source of fibre and provides one deliciuos serving of vegetables
